    Air Fryer Potato Fritters

    Super easy 4 ingredient air fryer potato fritters! Crunchy on the outside and soft in the middle, just like a great hash brown.

    These oh-so-irresistible air fryer potato fritters make the perfect addition to any meal. 

    Grated potatoes are combined with onion, egg and flour to make the crispest potato pancakes, just like a hash brown! Serve with bacon and eggs for breakfast, as a savoury side with your main course, or as a tasty snack any time.  

    You could even make them as a simplified version of Hanukkah latkes or polish pancakes! They’re so easy and delicious, you’ll want to whip up a double batch.

    Ingredients you’ll need:

    All you need to make this air fryer potato fritters recipe are 4 key ingredients:

    • Russet potatoes: peeled with a box grater. You will need about 3 large potatoes to make these
    • Onion: Use a brown/ yellow onion
    • Eggs: I don’t recommend a egg replacement here
    • Flour: I used spelt but you can also use purpose flour or gluten-free flour.
    • Salt + pepper
    • Olive oil cooking spray

    How to make air fryer potato fritters

    Grate the potatoes and onion on the large holes of a box grater.

    Squeeze: Transfer the mixture to a kitchen towel and pull up the sides of the towel then squeeze out the moisture as much as possible.

    Combine: Place the potato and onion mixture in a large bowl and add the eggs, flour, salt, and pepper. Stir until well combined.

    Fritters: Spray the air fryer basket with oil. Scoop the mixture into a ¼ cup measuring cup, invert the mixture onto basket, then press down on the mixture to flatten it into the pancake form.

    Air fry: Cook for 10 minutes, flipping halfway.

    Serve with a dollop of Greek yoghurt or sour cream and chives if desired. 

    Tips and variations

    • Squeezing out the moisture in the potato onion mixture is KEY. If you don’t do this part well, your fritters won’t stay together and they won’t crisp at all.
    • Don’t overcrowd the basket. You want to make sure the air can properly circulate, so the potato cakes crisp up. This also makes it easier to flip them.
    • Seasoning: try adding 2 teaspoons of your favourite spice mix like moroccan, cajun or curry. Spring onions (green onions), chopped herbs like parsley also make a delcious addition.
    • Gluten free: Use gluten free all purpose flour, buckwheat or brown rice flour if needed to gluten free.

    What to serve with potato fritters

    I like to serve them with a dollop of greek yoghurt (or sour cream) and chives, but apple sauce and smoked salmon also go great with this recipe!

    How to store

    Store leftover cooled air fryer potato fritters in an airtight container with paper towel in between them, for 3 to 4 days. Note: they will lose their crisp.

    To reheat: Place them into the air fryer or microwave and heat until warmed up.

    FAQ

    How do you keep potato pancakes from falling apart?

    If your mixture is too runny you might not have enough flour. Fix this by adding more flour, 1 tablespoon at a time until you get a better consistency, the mixture should be somewhat wet and will have a slight stickiness. Also make sure you squeeze your mixture well in a cheesecloth.

    How do you keep potato pancakes crispy?

    Let them dry on a wire rack, instead of paper towels. They're best served immediately.

    Can you use sweet potatoes in place of regular potatoes?

    Yes! Any variety of potato will work in this recipe. I think sweet potato fritters would be delicious alternative!

    Notes

    • Use any potato variety you have- red, russet or brushes potatoes all work well.
    • Refrigerate leftovers in an airtight container with paper towe in between them for up to 3 to 4 days.
