Description
Super easy 4 ingredient air fryer potato fritters! Crunchy on the outside and soft in the middle, just like a great hash brown.

- 4 large potatoes, coarsely grated
- 1 small onion, coarsely grated
- 1//3 cup) plain flour, or more as needed
- 2 eggs
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil cooking spray
- Greek-style yoghurt or sour cream and chives, to serve
Instructions
- Grate the potatoes and onion on the large holes of a box grater.
- Transfer the mixture to a kitchen towel and pull up the sides of the towel then squeeze out the moisture as much as possible.
- Place the potato and onion mixture in a large bowl and add the eggs, flour, salt, and pepper. Stir until well combined.
- Spray the air fryer basket with oil. Scoop the mixture into a ¼ cup measuring cup, invert the mixture onto basket, then press down on the mixture to flatten it into the pancake form.
- Cook for 10 minutes, flipping halfway.
- Serve with a dollop of Greek yoghurt or sour cream and chives if desired.
Notes
- Use any potato variety you have- red, russet or brushes potatoes all work well.
- Refrigerate leftovers in an airtight container with paper towe in between them for up to 3 to 4 days.
