Description

Super easy 4 ingredient air fryer potato fritters! Crunchy on the outside and soft in the middle, just like a great hash brown.


Ingredients

  • 4 large potatoes, coarsely grated
  • 1 small onion, coarsely grated
  • 1//3 cup) plain flour, or more as needed
  • 2 eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil cooking spray
  • Greek-style yoghurt or sour cream and chives, to serve

Instructions

  1. Grate the potatoes and onion on the large holes of a box grater.
  2. Transfer the mixture to a kitchen towel and pull up the sides of the towel then squeeze out the moisture as much as possible.
  3. Place the potato and onion mixture in a large bowl and add the eggs, flour, salt, and pepper. Stir until well combined.
  4. Spray the air fryer basket with oil. Scoop the mixture into a ¼ cup measuring cup, invert the mixture onto basket, then press down on the mixture to flatten it into the pancake form.
  5. Cook for 10 minutes, flipping halfway.
  6. Serve with a dollop of Greek yoghurt or sour cream and chives if desired.

Notes

  • Use any potato variety you have- red, russet or brushes potatoes all work well.
  • Refrigerate leftovers in an airtight container with paper towe in between them for up to 3 to 4 days.
