Carrot Fritters

Description

These easy, 4-ingredient carrot fritters are packed with veggie goodness and creamy ricotta. They make a healthy snack, lunchbox favourite, or simple side dish for any meal.


Ingredients

Scale
  • 1 cup packed, finely grated carrots
  • ½ cup ricotta cheese
  • 1 large egg
  • 2 tablespoons wholemeal self-raising flour
  • ¼ teaspoon garlic powder
  • 1 teaspoon dried thyme


Instructions

  1. Use a fine grater and place the grated carrot in a large mixing bowl.
  2. Add the ricotta, egg, flour, and any seasonings. Stir with a silicone spatula or spoon until well combined.
  3. Heat a non-stick skillet over medium heat and lightly spray with oil. Scoop tablespoon-sized portions into the pan, spacing them out. Flatten slightly and cook for 1–2 minutes per side, until golden and cooked through.
  4. Enjoy warm with your favourite dip or plain as is.

Notes

  • Store cooled fritters in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat in a skillet, oven, or air fryer, from frozen or thawed.
