Cheesy Sautéed Cauliflower

Description

This seriously delicious sautéed cauliflower is hands down one of my favorite easy, flavor-packed veggie sides. Fresh cauliflower florets, melted cheddar cheese, garlic powder, paprika, a little butter and a splash of water.


Ingredients

Scale
  • 1 medium head cauliflower (about 800 g / 28 oz)
  • 3/4 cup water
  • 1 tablespoon unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/3 cup grated sharp cheddar cheese*


Instructions

  1. Wash and cut the cauliflower into small, bite-sized florets for quick and even cooking.
  2. Heat a large pan over medium heat. Add the cauliflower and a splash of water. Lower the heat slightly, cover, and steam for 5–6 minutes until just tender and the water has evaporated.
  3. Add the butter, garlic powder, paprika, salt, and pepper. Toss to coat, then spread the florets into a single layer. Cook without stirring for 2 minutes at a time to get that golden, caramelized color.
  4. Turn off the heat and sprinkle the cheddar over the top. Toss gently, cover for 1 minute to let the cheese melt, then uncover and season to taste.
  5. Enjoy warm as a cozy, cheesy veggie side!

Notes

  • Swap the cheddar for freshly grated parmesan for a stronger cheese flavour.
  • Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the air fryer for about 5 minutes to keep it crisp, or warm in the oven at 180°C/350°F for 5–7 minutes. The microwave works too, though the cauliflower will soften more.
