These crispy feta fried eggs are the ultimate breakfast delight! A delicious golden feta cheesy crust with a perfectly cooked egg served in a tortilla.

Once you try these 5-minute crispy feta fried eggs, you’ll be hooked! They’re crunchy, flavourful, and cook in minutes, creating a perfect breakfast or lunch. The secret? Crumbled feta on the hot pan creates a beautiful crispy and golden crust for the egg. YUM! You can serve this over a tortilla like I did, toast, or have as is. It is no surprise that  Grace Elkus’s recipe went viral. They have been popping up everywhere on my feed, and now I am forever hooked.

I love how quick, easy, and healthy this recipe is. Eggs and feta are packed with protein, healthy fats, and carbs from the tortilla that will keep you full and satisfied. Add some avocado, leafy greens, and you are set! It’s a fantastic way to switch up your usual eggs!

Ingredient’s you’ll need:

The crispy feta fried eggs only require 2 key ingredients but your favourite additions:

  • Feta cheese: The main ingredient in this recipe! I find it’s always best to use a block of Greek style feta cheese rather than pre crumbled feta. 
  • Eggs: Use whole eggs, not egg whites.
  • Tortilla: A small tortilla or slice of toasted bread is the base of the feta fried eggs. Alternatively, you can even enjoy it on it’s own.
  • Avocado: Smashed over the tortilla or toast and is the perfect combination with a squeeze of lemon juice. The acidity works so well with the salty eggs and feta. You can replace its with a dollop of any of your favourite dip, such as hummus or warm refried beans.
  • Seasonings: I love adding a good pinch of red pepper flakes to mine but black pepper, oregano or even pesto is amazing! Skip the salt as the feta cheese is salty enough.
  • Extras: I serve mine with rocket (arugula) but you can also add baby spinach, pickled red onions, sautéed mushrooms or tomatoes as the base.

How to make crispy feta fried eggs

Heat a small nonstick skillet over medium-high heat. Crumble in the feta and immediately crack an egg into the centre.

Cook the egg to your liking and cheese is crispy and golden on the bottom.

Char the tortilla in a dry pan on the stove or over a gas flame then add the mashed avocado and rocket leaves on top.  

Slide the fried feta egg on top of the tortilla and enjoy!

Tips and tricks

  • Good quality Greek feta cheese for the best flavour! 
  • Use a non stick pan as the feta cheese will stick to a stainless steel pan.
  • Cook the feta cheese over medium heat and keep your eye on it. You don’t want it to burn over a high heat.
  • Remove the cooked feta eggs off the pan straight away as the cheese will start to crisp up as it cools down.
  • Add a lid to the pan if you prefer the eggs cooked to a medium or hard texture.

How to store

Crispy feta eggs will taste the best if they are eaten right away. Plus the longer it will cool down, the crispy crust will slowly soften up .

Fridge: However, you can store any leftovers in an airtight container in the refrigerator for 2-3 days. Enjoy cold or reheat in a pan or the microwave for a few minutes. The texture however won’t be the same and the egg can overcook.

Recipe FAQ 

Can I use other types of cheese besides feta? 

Yes of course! Goat cheese would be another amazing cheese. Parmigiano Reggiano, Pecorino or cheddar cheese would also give you the crust but without the same creaminess.

What does feta cheese go with?

Feta cheese is quite salty so the above addition of fresh avocado, lemon juice and red pepper flakes and rocket (arugula) give a lovely balance. Other fresh vegetables such as cucumbers and tomatoes or a salad are also a match made

Are feta eggs vegetarian friendly?

Yes! This recipe vegetarian friendly however it’s not vegan due to the eggs and feta cheese

  • 1/3 cup greek feta cheese, crumbled
  • 1 large egg
  • Pinch of red pepper flakes or dried oregano
  • 1 small tortilla
  • 1/4 avocado, mashed
  • Small handful arugula (rocket leaves)
  • Squeeze of lemon juice

Instructions

  1. Heat a small nonstick skillet over medium-high heat. Crumble in the feta and immediately crack an egg into the centre.
  2. Cook the egg to your liking (medium or with a tiny yolk) and cheese is crispy and golden on the bottom.
  3. Char the tortilla in a dry pan on the stove or over a gas flame then add the mashed avocado and rocket leaves on top. 
  4. Slide the fried feta egg on top of the tortilla and enjoy.

  • Best enjoyed immediately*
