These honey chipotle shrimp (prawn) tacos are the ultimate healthy recipe to whip up for summer entertaining, BBQs or when you are craving something refreshing and ridiculously tasty. The prawns are marinated in the most delicious mix of honey, chipotle seasoning and garlic then quickly pan fried. We serve them in warm tortillas with an incredible mango cucumber salsa made with fresh fruit and veggies that only takes 5 minutes to whip up.
There’s something about sweet and fruity salsas that I just can’t get enough of. Ripe mango, red capsicum, a nice crunch from the cucumber and the freshness from the coriander and lime juice – make this salsa heavenly! A truly simple and tasty dish. This is the type of salsa you can enjoy with chips scooping it up too. In fact it makes for kickass leftovers so if you are lucky enough to have some left, get creative with it! Add to salads, make tostadas, anything!
Ingredients you'll need
These gorgeous, summery honey chipotle shrimp tacos are packed with fresh produce for a mix of sweet, spicy and tangy. You’ll absolutely love the mango cucumber salsa paired with the delicious spicy prawns (shrimp). Here’s everything you need:
- For the honey chipotle shrimp: fresh or frozen prawns (shrimp), honey, chipotle seasoning, garlic powder and salt
- Mango cucumber salsa: mango, Lebanese (or english) cucumber, red onion, red capsicum (bell pepper), coriander and fresh limes.
- To serve: tortillas of choice and extra coriander leaves if you like.
How to make these easy honey chipotle shrimp tacos
To start, you’ll want to make sure your shrimp/ prawns are thawed, deveined, and tails removed.
- Prepare Salsa: Toss all the mango cucumber salsa ingredients in a bowl and set aside until ready to assemble tacos.
- Cook prawns (shrimp): heat up a pan over medium-high heat with a little olive oil. Season prawns with chipotle seasoning, garlic powder and salt. Add to the pan and cook until pink. This should take about 1-2 minutes on each side.
- Warm tortillas: Either warm up tortillas in the microwave or over a hot dry pan on the stovetop. I like to use a griddle pan for mine!
- Assemble Tacos: To assemble tacos, start with mango salsa then top with the honey chipotle prawns and fresh coriander leaves. Serve.
How to store leftovers
If you have any leftover honey chipotle shrimp tacos, store them separately in the fridge in an airtight container. Your leftover shrimp (prawns) will last 3-4 days if stored properly.
Leftover salsa will have a 3 day limit in the fridge. Make sure to keep it tightly covered or sealed to keep it's freshness.
Substitutions, tips and tricks
- Buy peeled and deveined prawns (shrimp). Peeling and deveining prawns can be fiddly, so definitely worth the extra dollar in my opinion! But the choice is yours.
- Use butter lettuce, romaine or iceberg instead of tortillas for lettuce wraps.
- You can also use hard shell taco shells in place of the flour tortillas.
- The mango salsa can be made up to 8 hours in advance.
Do I have to serve these as tacos?
No! I’ve served them as lettuce wraps and in a nacho bowl with tortilla chips and they were awesome. I like to buy baby cos or gem lettuce, but iceberg or romaine will also work.
Do I have to serve the prawns (shrimp) hot?
Definitely not. While they are good straight from the stove, they’re just as good at room temperature. In fact, if you’re serving them as lettuce wraps, I’d actually recommend serving them at room temperature or even cold.
