    Peanut Butter Stuffed Dates

    These peanut butter dates are such a quick and easy dessert or snack. They are so simple to make and can be made 2 different ways with minimal ingredients!

    Looking for a quick and easy snack or dessert idea? These peanut butter dates are just what you need! They are so flipping good and beyond addicting to eat. 

    This stuffed dates recipe can be made 2 ways. Firstly, you can eat them simple as is or get fancy and top with your favourite toppings. I absolutely love adding a good sprinkle of granola or cacao nibs (like pictured here). Or you can take it up a notch and dip in a chocolate shell coating for a healthy snickers bar kind of vibe. 

    They’re super easy to make, vegan and require no cooking. You only need to wait a few minutes for the chocolate to harden if using it!

    Ingredients you’ll need

    You only need a handful of simple ingredients to make this stuffed date recipe:

    • Medjool dates: Use large soft fresh dates if possible. Medjool dates have a sweet caramely flavour and are best for stuffing because of their large size, while other varieties like degleet are best enjoyed on their own.
    • Peanut butter: the star of the show! Be sure to use a natural, creamy peanut butter to get the right texture. 
    • Flakey sea salt (optional)
    • Fillings: use or fave or see some ideas listed below.
    • Optional: melted dark chocolate

    How to make dates with peanut butter 

    This is seriously one of the easiest desserts you can make! It’s just a few steps and zero cooking time involved.

    Prepare the dates: Using a sharp knife, cut a slit in each date and remove the pit with your fingers. Be careful when making the slit that you don’t cut the date in half; you just want to make a crevice for which to add the peanut butter.

    Peanut butter: Fill each date with 1 teaspoon of peanut butter. I always use a natural peanut butter which contains no added sugar, salt or oil. You can also use different nut butter or if you are looking for a nut-free version you could use tahini.

    Fillings: Top with desired toppings enjoy!

    Chocolate shell: If topping with chocolate, melt ⅓ cup dark chocolate chips in a microwave safe bowl in 30 second increments, stirring in between.  Place stuffed dates on a baking tray and drizzle each with about 1 teaspoon of melted chocolate and sprinkle with sea salt if desired.

    Chill: Freeze for 10 minutes to firm up then enjoy!

    Which dates are best for stuffing?

    The best type of dates to use are fresh medjool dates that are plump, tender and have a slight glossy look to their skin. You usually find them in the produce section as opposed to the dried fruit aisle.

    Are stuffed dates healthy? 

    You bet! Dates are a healthy source of vitamins, minerals, and dietary fibre with 2 dates providing over 3 grams. However, like other dried fruit, they’re a concentrated source of natural sugar and are not a low sugar food. I love to stuff dates with nut butter as it provides some healthy fats and protein. Doing so will help to keep you feeling fuller and satisfied for longer, while also elongating your blood sugar curve (a good thing!).

    Filling ideas

    • Cacao nibs 
    • Mini chocolate chips
    • Granola 
    • Chopped nuts
    • Goji berries 
    • Shredded coconut 
    • Sprinkle with cinnamon

    How to store peanut butter dates:

    • Fridge: Store in an air tight container for up to 1 week.
    • Freezer: Stuffed dates freeze well. Freeze on a baking tray until frozen then transfer to a ziplock bag and take out as needed. I actually love them straight from the freezer but they are best when taken up to room temperature.

    Ingredients

    Scale
    • 6 Mejdool dates, pitted
    • ¼ cup natural peanut butter
    • Fillings of choice: cacao nibs or granola
    • ⅓ cup dark Chocolate chips
    • Sea salt

    Instructions

    1. Carefully remove the pits from the dates. Be careful to keep one side of the date intact. You want to add a slit to hold the peanut butter rather than splitting the date in half.
    2. Add a teaspoon of peanut butter to each date.
    3. Fill with toppings and sprinkle with sea salt if desired.
    4. If topping with chocolate, melt the dark chocolate chips in a microwave safe bowl in 30 second increments, stirring in between. Place stuffed dates on a baking tray and drizzle each with about 1 teaspoon of melted chocolate and sprinkle with sea salt if desired.
    5. Freeze for 10 minutes to firm up then enjoy!
