    Snickers Stuffed Dates

    These 4 ingredient snickers dates are the easiest healthier snickers recipe. Medjool dates are stuffed with peanut butter, roasted peanuts and covered in chocolate.

    Copycat date snickers! The ultimate candy recipe made with whole food ingredients. They taste just like an actual snickers bar but are gluten free, vegan and are one of my absolute favourite recipes to make and keep in the freezer.

    If you’ve ever had a date, you know how incredibly sweet and delicious they are. They are a concentrated source of sugar with a “caramel like” flavour, packaged together with fiber, nutrients, and antioxidants just as nature intended. For this reason, Medjool dates make an amazing natural sweetener.  And adding peanut butter and peanuts provides healthy fats that will help keep you full for longer and totally satisfied!

    Ingredients you’ll need

    The best part about these snickers dates is you only need 4 simple ingredients that you likely already have in your kitchen. Here’s what you need:

    • Medjool dates: you can buy medjool dates that are already pitted or pit them yourself (it’s super easy). My favourite brand is Natural Delights which is found in the produce section of most grocery stores (near the refrigerated section).
    • Peanut butter: I prefer smooth natural peanut butter but you can use almond butter, cashew butter or tahini. My go-to brands of peanut butter are Pics Peanut Butter and Mayvers.
    • Roasted peanuts: Add an extra boost of peanut flavour and some crunch for texture! I like whole roasted peanuts but crushed peanuts also work.
    • Chocolate: Use a good quality dark chocolate. I like Lindt 85% dark chocolate.
    • Coconut oil: optional.* Coconut oil helps the melted chocolate to become thinner, which makes it easier to dip the dates. You can skip it, but your melted chocolate will likely be pretty thick.

    How to make snickers dates

    This recipe is so easy and perfect to make with kiddos!

    Cut a slit in the dates and remove the pit.

    Fill each date with a spoonful of peanut butter.

    Sprinkle each date with a few peanuts after they’re filled with peanut butter.

    Melt the chocolate and coconut oil (if using) in a small bowl in the microwave.

    Dunk each peanut stuffed date in the chocolate. Use a fork to hold the date together while dipping. Pop the covered dates on parchment paper the place them in the fridge until the chocolate sets, about 15 minutes.

    Tips and tricks

    • Use an icing bag or a zip-lock bag and cut a corner to easily fill dates with peanut butter!
    • To make a single serving just use 1 date, 1 teaspoon of peanut butter, 1 heaped teaspoon roasted peanuts and about 1-2 tablespoons of melted chocolate.

    How to store

    Store the date snickers in an airtight container in the fridge for up to 2 weeks. You can also store them in the freezer for 1-2 months.

    How else can you use dates?

    Dates taste delicious by themselves as a snack, or you could stuff them with goat cheese cheese and pistachios or wrap them with crispy bacon for an appetizer.

    Does snickers have peanut butter?

    Yes! The nougat is made from whipped egg white, corn syrup, sugar, salt and peanut butter.

    How many calories are in stuffed date snickers?

    There are about 150 calories in each chocolate-covered date snicker.

    Are these healthy date snickers vegan?

    Yes! Just make sure to use dark chocolate that has no animal-derived products.

    Ingredients

    Scale
    • 10 medjool dates 
    • ¼ cup peanut butter
    • ¼ cup roasted peanuts
    • ½ cup dark chocolate chunks or chocolate chips
    • 1 teaspoon coconut oil
    • Sea salt 

    Instructions

    1. Cut a slit in each date and remove the pit.
    2. Fill each date with peanut butter (about 1 teaspoon) and top with a few peanuts. Set aside.
    3. Place the chocolate and the coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each.
    4. Using a fork, dip each date into melted chocolate and use a spoon to coat the date until completely covered. Place the choclate covered dates on a sheet pan lined with parchment. Sprinkle remaining crushed peanuts on top of each date.
    5. Place the dates in the fridge for 30 minutes for the chocolate to set. Enjoy!
