Delicious apricot bliss balls bursting with lemon, ginger, and coconut flavours. Made from just 8 ingredients, these energy balls are ideal for a pre-workout boost or a healthy kids snack!
Ingredients

- 1 1/2 cups dried apricots
- 1 cup desiccated coconut
- 1/2 cup raw cashews
- 1/4 cup (25g scoop) vanilla protein powder
- 1 tablespoon chia seeds
- Juice and zest of 1 lemon
- 2 tablespoons maple syrup
- 2 teaspoons freshly grated ginger
Instructions
- Combine all the ingredients in a food processor and blend until smooth with a slightly grainy texture. If the mixture is too dry, add a little water and blend again.
- Use a cookie scoop to portion out the mixture, then roll it into balls using your hands.
- Coat the balls by tossing them in a bowl with extra desiccated coconut. Enjoy immediately or store for later.
