Description
This ground beef and potatoes skillet is a weeknight go to that is hearty, flavour packed, and made in one pan. Loaded with seasoned beef mince, tender potatoes, peppers, and spinach, it’s a simple, satisfying dinner the whole family will love.

- 450g (1lb) baby potatoes, cut into 1-inch cubes
- 500g (1lb) extra lean ground beef
- 1 brown onion, diced
- 1 red bell pepper (capsicum), chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½–1 teaspoon salt, to taste
- ¼ cup tomato paste
- 1 cup (250ml) water
- 150g (5oz) frozen chopped spinach
Instructions
- Heat the oil in a large skillet over medium heat. Add the potatoes and cook, stirring occasionally, until they start to turn lightly golden on the outside but are still slightly firm in the centre, about 5 minutes.
- Push the potatoes to the sides of the pan to create space in the centre. Add the ground beef, onion, and bell pepper along with the paprika, cumin, and salt. Cook, breaking up the meat as it browns, for 5–6 minutes until the beef is mostly cooked through.
- Stir in the water and tomato paste, mixing everything together well so the potatoes are coated in the sauce. Continue cooking until the beef is fully browned.
- Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 15 minutes, stirring occasionally, until the sauce has thickened and the potatoes are fork-tender but still hold their shape.
- Stir in the frozen spinach and cook for another 2 minutes until heated through. Serve warm and enjoy!
Notes
- Store in an airtight container for 4–5 days oe freeze for up to 3 months. Thaw overnight in the fridge, then reheat.
