Air Fryer Fingerling Potatoes with Herb Tahini

Description

These air air fryer potatoes are crispy on the outside, fluffy and tender on the inside. Paired with a delicious green tahini sauce for an easy, healthy, gluten-free side dish that is sure to be a hit with family and friends!


Ingredients

Fingerling Potatoes:

  • 500g/ 1.1lbs fingerling (kipfler) potatoes, sliced in half lengthways
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • salt + pepper, to taste

Herb Tahini Sauce:

  • 1/2 cup tahini
  • 1/2 cup packed mint leaves
  • 1/2 cup packed parsley or coriander (cilantro) leaves
  • juice of 1-2 lemons
  • 2 garlic cloves
  • 1/2 cup water
  • salt + pepper, to taste

Instructions

  1. Wash the fingerling potatoes, then slice in half lengthwise. Remove any black spots if there are any.
  2. In a large mixing bowl combine the potatoes, oil, garlic powder, salt and pepper.
  3. Add potatoes to the air fryer basket and cook at 180C/ for 15-18 minutes or until crispy.
  4. Meanwhile, make the herb tahini dressing by adding all of the ingredients in a small food processor or blender. Blend for 30 seconds or until smooth. Feel free to add additional water if you want a runnier dressing.
  5. Serve the fingerling potatoes and drizzle tahini sauce on rtop. Feel free to garnish with some sesame seeds + extra black pepper as desired. Serve extra tahini sauce on the side for dipping.

Notes

  • Air-fried fingerling potatoes taste best when they are fresh and crispy. 
  • Leftovers can be stored in an airtight container in the fridge for about 3-4 days.
  • You can reheat the potatoes in the airfryer at 180°C/ 360°F for 1-2 minutes. Alternatively, you can warm them up in the microwave but the potatoes won’t retain there crispy texture this way.
