I have officially become one of those potato-obsessed people. Like, I have to eat them every single day or I go crazy. These air fryer fingerling potatoes are the ultimate way to make them. They’re so quick, easy, healthy and come out super crispy every time!
Did I mention this recipe only takes 20-25 minutes in total? Using the air fryer is such a great way to speed up your roasting game! While I usually eat them pretty plain, I thought it would be so delicious to top them with the yummiest herb tahini dressing to change things up! The tahini dressing adds SO much flavour to this simple dish, along with some healthy fats. You can serve them with different meats, veggie side dishes or even make a batch to snack on. I love eating leftover cold straight from the fridge.
Ingredients Needed
All you need to make this air fryer fingerling potatoes recipe are 10 simple ingredients (including water, salt + pepper!):
- Fingerling potatoes (kipfler potatoes)
- Olive oil
- Tahini
- Lemon juice
- Fresh mint
- Parsley or coriander (cilantro)
- Garlic cloves + garlic powder
- Salt + pepper
What are fingerling potatoes?
Fingerlings (also called kipfler potatoes) are elongated small potatoes typically the size of a finger.
They have thin skin and don’t need to be peeled. These potatoes don’t need much time to roast up in the air fryer and they ALWAYS turn out nice and crispy. They’re soft and buttery with a very pleasant mild flavor.
You can either roast them whole or just cut them in half. They’re the perfect size for finger food – easy to pick up, dip and eat!
How to make the best air fryer fingerling potatoes
Roasting fingerling potatoes in the air fryer couldn’t be any easier. Grab yourself a knife and blender, and let’s get cooking!
Wash the fingerling potatoes, then slice in half lengthwise. Remove any black spots if there are any.
In a large mixing bowl combine the potatoes, oil, garlic powder, salt and pepper.
Add potatoes to the air fryer basket and cook at 180C/ for 15-18 minutes or until crispy
Meanwhile, make the herb tahini dressing by adding all of the ingredients in a small food processor or blender. Blend for 30 seconds or until smooth. Feel free to add additional water if you want a runnier dressing. Note this will make a large batch of sauce.
Serve the fingerling potatoes and drizzle tahini sauce on top. Feel free to garnish with some sesame seeds + extra black pepper as desired. Serve extra tahini sauce on the side for dipping.
