Ground Turkey Teriyaki Stir Fry

Description

This Ground Turkey Teriyaki Stir Fry is a quick, 30-minute weeknight meal made with veggies, lean ground turkey, and a sweet homemade teriyaki sauce served over rice.


Ingredients

  • 2 teaspoons avocado oil
  • 500g/ 1 lb ground turkey breast
  • 4 spring onions, chopped
  • 1 head broccoli, cut into florets
  • 1 red capsicum (bell pepper), chopped
  • 1 carrot, thinly sliced

Teriyaki Sauce:

  • 3/4 cup chicken bone broth
  • 1/3 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 tablespoons arrowroot starch or cornflour

Instructions

  1. Heat avocado oil in a large skillet or wok over medium-high heat, then add the ground turkey and cook for 3 to 4 minutes, breaking it into small chunks as it cooks.
  2. Add the broccoli, spring onions, carrots, and red pepper. Cook for another 3 to 4 minutes or until the turkey is no longer pink.
  3. While the turkey and veggies are cooking, whisk together the sauce ingredients (broth, soy sauce, honey, rice vinegar, sesame oil, fresh ginger, garlic, arrowroot starch) in a jug.
  4. Pour the teriyaki sauce over the turkey and veggies in the skillet and continue cooking for 4 to 5 minutes, or until the sauce thickens.
  5. Serve the turkey and vegetables over prepared rice with a sprinkle of sesame seeds. Enjoy!

Notes

  • Store leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Thaw overnight in the fridge and reheat before serving over rice.
