Description

These peanut butter stiffed dates are such a quick and easy dessert or snack. They are so simple to make and can be made 2 different ways with minimal ingredients!


Ingredients

  • 6 Mejdool dates, pitted
  • 1/4 cup natural peanut butter
  • Fillings of choice: cacao nibs or granola
  • 1/3 cup dark Chocolate chips
  • Sea salt

Instructions

  1. Carefully remove the pits from the dates. Be careful to keep one side of the date intact. You want to add a slit to hold the peanut butter rather than splitting the date in half.
  2. Add a teaspoon of peanut butter to each date.
  3. Fill with toppings and sprinkle with sea salt if desired.
  4. If topping with chocolate, melt the dark chocolate chips in a microwave safe bowl in 30 second increments, stirring in between. Place stuffed dates on a baking tray and drizzle each with about 1 teaspoon of melted chocolate and sprinkle with sea salt if desired.
  5. Freeze for 10 minutes to firm up then enjoy!

Notes

  • Fridge: Store in an air tight container for up to 1 week.
  • Freezer: Freeze on a baking tray until frozen then transfer to a ziplock bag and take out as needed.
