Roasted Green Beans & Carrots

These roasted green beans and carrots are the best veggie side dish. Carrots and green beans are roasted to perfection, topped with feta and lemon.


  • 350g (12oz) green beans, ends trimmed
  • 300g (10.5oz) carrots, peeled
  • 1 1/2 tablespoons olive oil
  • Salt + pepper, to taste
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon parsley, minced
  • Half a lemon juice


  1. Preheat the oven to 180°C/ 400F. Line a large rimmed baking sheet with parchment paper. Set aside.
  2. Add the green beans and carrots to the baking sheet, spray or drizzle with olive oil and sprinkle with salt and pepper. Toss to combine then spread in an even layer. 
  3. Bake for about 30-35 minutes, stirring once halfway through, or until the veggies are tender to your liking.
  4. Garnish the carrots and green beans with the parsley, feta cheese and lemon juice. Serve.


  • Store leftovers  in an airtight container in the fridge for 3-4 days. Reheat in the microwave or the oven.
