    The absolute BEST single serve protein cookie that is gluten free, vegan and only has 6 ingredients! No added sugar besides the chocolate chips and it only takes 2 minutes to make.

    HELLLLOOO! Save this post guys because you will be referring back to it over and over again. This is the ultimate protein cookie recipe. The one we have been waiting for. It is vegan, gluten-free and makes ONE SERVING!! It is so simple and easy to make. Almost too easy to the point where you will want to whip this up on the daily. Just wait and see!

    This single serve protein cookie makes one epic snack. Especially post workout when you’re craving something sweet and need a little pick me up. Or even you just feel like a cookie but don’t want to make a whole batch! It’s chewy, a little firm on the outside and tastes pretty kick ass dunked in your favourite milk.

    Oh, and I did I mention this recipe is super customisable? You can literally add anything your craving! As long as you use a good tasting protein powder (any flavour), then I guarantee you will be in cookie paradise.

    Ingredients Needed

    All you need to make this single serve protein cookie are 6 ingredients. Feel free to play around with the flavour – this recipe is SO flexible!

    • Oat flour
    • Peanut butter
    • Chocolate chips
    • Vanilla protein powder (I used a vanilla plant based one)
    • Non dairy milk
    • Baking powder
    • Chocolate chip

    How to make the best ever single serve protein cookie

    This single serve gluten free cookie recipe is even easier than traditional cookies. Plus, it's made with simple healthier ingredients.

    To start, prepare a sheet of baking (parchment) paper and get out your ingredients.

    Mix: Combine all the ingredients together in a small bowl to form a dough.

    Form into cookie: Using your hands, form the dough into a cookie and place on a small piece of baking paper.

    Cook: Place in the microwave and cook for about 90 seconds or until cooked through.

    Eat: sprinkle with a little flakey sea salt if your feeling fancy and enjoy!

    Recipe Modifications & Ingredient Swaps

    You know me… I love taking my treats to the next level! If you want to do the same, try adding some of these mix-ins to really up your single serve healthy cookie game.

    • Use any nut or seed butter in place of the peanut butter. Try tahini for a nut-free version!
    • Swap the dark chocolate chips for white chocolate chips or even sprinkles.
    • If you're not into chocolate chips sub dried fruit. Raisins and cranberries go really well in this recipe.
    • Use any flavoured protein powder you like. Try chocolate protein for a double chocolate protein cookie. OMG yum!
    • Add about 6 fresh or frozen raspberries or blueberries for a berry protein cookie. 
    • Don't have any oat flour? Simply use the same amount of wholemeal flour, spelt flour or gluten free flour.

    How long will this cookie keep?

    Since this recipe is so easy and only makes one serving I suggest eating it straight away. Otherwise you can store it in a snap lock bag in the pantry for up to 3 days.

    Can I bake this in the oven instead?

    Absolutely! You can also bake this cookie in the oven if you prefer. Simply bake at 160C (fan forced)/ 350F for 10-12 minutes.

    • ¼ teaspoon baking powder 
    • 1 teaspoon peanut butter
    • ¼ cup milk of choice
    • 1 tablespoon dark chocolate chips

    Instructions

    1. Combine all the ingredients together in a small bowl to form a dough.
    2. Using your hands, form the dough into a cookie and place on a small piece of baking paper.
    3. Place in the microwave and cook for about 90 seconds or until cooked through.

      I made this cookie for dessert and it was so nice!
      I was thinking of making a big batch of these and popping the dough in the freezer for when I want to have cookies for dessert.
      Is this freezable??

        Hi Sherry, I'm so happy you enjoyed the recipe! Yes you can absolutely freeze them- just make sure to store them in a ziplock bag to prevent freezer burn 🙂

      It was so dry! Maybe my scoop of protein is bigger than the scoop you use. Do you have the recipe in grams???

        Oh no that shouldn't happen! I used nuzest vanilla protein powder here, it's about 12-15g per 1 scoop. If your dough is too dry just add a little extra milk (about 1-2 teaspoons should fix it). Please let me know if you give it another try 🙂
