Roasting carrots and potatoes in the air fryer is the BEST way to get a them a nice crispy exterior while keeping the inside tender and flavourful. You only need a bag of carrots, potatoes, olive oil and seasonings of choice. They cook for about 20 minutes and result in the most delicious and healthy side dish that your family will love.
While they are absolutely delicious on their own, I like to drizzle them with a lemon tahini sauce and freshly chopped parsley. It’s a such great way to elevate a simple dish. They are perfect for busy weeknights or to take to dinner parties and picnics. Plus, you can easily adjust the seasoning to suit your taste— use whatever seasonings you have in your pantry!
Ingredients you’ll need:
You'll need 3 key ingredients to make these air fryer carrots and potatoes recipe plus some seasonings for flavour.
- Carrots: I used regular orange carrots but you can also use rainbow carrots for a colourful mix.
- Potatoes: You can use any type of potato that you like. Just make sure to wash them well first. Leave the skin on and diced into quarter cubes so that they cook evenly.
- Olive oil: I prefer extra virgin olive oil or avocado oil spray to evenly coat the veggies.
- Seasonings: I use a combination of garlic powder, dried mixed herbs, salt and pepper to season my air fryer potatoes and carrots. But you can really use any spices that you like.
- Optional: I love serving them with a drizzle of tahini sauce and parsley. It's so yum!

How to make air fryer carrots and potatoes
Wash the potatoes and peel the carrots.
Dice the potatoes and carrots into 2 inch sized pieces.
Rinse the potatoes with cold water and drain. Pat them dry well with a kitchen towel to remove any moisture.
Toss the potatoes and carrots with oil and spices in a large bowl.
Place them in the air fryer basket and cook for about 20-25 minutes at 180C/ 360F. Shake the basket a few times during cooking to ensure that they cook evenly.
Meanwhile, add the tahini sauce ingredients to a small jar and shake well until emulsified (well combined) and creamy.
Place the carrots and potatoes on a plate, drizzle with tahini and sprinkle with parsley. Serve and enjoy!
