    These air fryer cucumbers are the best snack and perfect for entertaining! Cucumbers are breaded then air fried until crispy on the outside and soft in the inside.

    Have you tried crumbed cucumbers?! 

    I know it might sound strange but air fryer cucumbers are my latest thing. If you like pickles then you’ll love these! 

    Cucumber slices are tossed in a herbed breadcrumb mixture then air fried until crispy. They are such an easy bite size snack to make, and are so good served with your favourite dipping sauce. You will find yourself making these on repeat; they are that good!

    Ingredients you’ll need

    The best thing about this air fried cucumbers recipe is that you only need a few basic ingredients:

    • Cucumber: Either 1 english cucumber or 2 Lebanese/ Persian cucumbers.
    • Flour: I used tapioca flour but regular all purpose flour will work too.
    • Egg: To hold the crumb onto the cucumbers!
    • Breadcrumbs: Use your choice of Panko, Italian breadcrumbs, regular or gluten free if needed.
    • Seasonings: Garlic powder, Italian seasonings.
    • Salt + pepper

    How to make air fryer cucumbers

    Start by slicing the cucumbers into 1cm rounds, leaving the skin on.

    Get three bowls: in one bowl add a whisked egg, add the flour to a container (so you can shake it) and the breadcrumbs + seasonings to another other bowl.

    Flour: Toss the cucumber slices in the flour to coat them

    Egg wash: dip each cucumber slice in the egg wash.

    Crumb: toss the cucumbers into the breadcrumb mixture to coat them, place them into a greased air fryer basket. Lightly spray with oil.

    Air fry: When the basket is full, air fry at 180C/ 350F for 15 minutes.

    Tips

    • Oven bake: You can easily bake them at 180C/ 350F for 15 minutes. Flip them halfway, so both sides get crunchy.
    • Do not crowd your air fryer basket or tray: You need to space them out to allow the hot air to circulate around the cucumbers to perfectly crisp them out.
    • Skins: make sure you leave the cucumber skin on so they stay in shape and don’t get too watery.

    How to store

    I recommend eating these air fryer cucumbers immediately as they will slowly loose there crisp. However you can refrigerate leftovers in an airtight container, for up to 4 days.

    To Reheat: Place them into the air fryer or microwave and heat until warmed up.

    Can you cook raw cucumbers?

    Yes, you can actually cook cucumbers. Cucumbers are cooked in various food cultures like Asian and regional Indian cuisines, where they're incorporated into stir-fries, steaming soups and curries.

    How long does it take to dehydrate cucumbers in an air fryer?

    Dehydrated cucumbers take a little longer compared to some other dehydrated foods. This is because of their high water content so need extra time for all the water to come away from the cucumbers. Air fry dehydrated cucumbers, take approximately 6 hours.

    Where is the best place to store cucumbers?

    Keep cucumbers toward the front of the refrigerator for up to 2 weeks. Whole cucumbers at room temperature on the countertop have a shelf life of up to a week if you keep them away from direct sunlight.

    Ingredients

    • ¼ cup tapioca flour or all-purpose flour

    • 1 teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • ½ teaspoon salt
